All you need to make these incredibly tasty energy balls are 4 ingredients! This is a super easy and simple recipe with such great taste! Today I bring a recipe for Healthy and Delicious Coconut Almond Energy Balls.
No need to bake or do anything complicated, just add all the ingredients in a food processor, shape the dough into little balls, and voilà, ready to eat!
I got inspired to make these energy balls when I was preparing the base or crust of the Chocolate Almond Tartelettes. While I was preparing it I tasted it and as I mentioned in that post, I could eat just the base, just the way it was because the taste was already so good! So, I thought straight away that I could prepare something inspired by that base, and why not energy balls?
Almond and chocolate (in the form of cacao powder, in this case) are a perfect combination already so these 2 would be present in the recipe for the energy balls. Coconut is another ingredient that I love and I think it also goes really well with chocolate, or in this case, cacao powder.
The sweetness of the recipe comes from the fresh dates, so no sugar added. Besides providing sweetness to the recipe, dates are rich in fiber and packed with vitamins and minerals, such as vitamin B6, copper, and potassium.
The dates also help to get all the ingredients together and make it easier to shape the dough into balls. You can use this as a base and change the other ingredients to have different types of energy balls, so you never get tired of always getting the same flavor.
Coconut Almond Energy Balls Recipe Ingredients:
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Pitted fresh dates: These are the Medjool dates type and are the base of our recipe, they give the sweetness to the recipe and keep all the ingredients together. The dates have to be fresh, otherwise they won’t be able to stick all the ingredients together.
Desiccated coconut: To add the coconut flavor. It is used in the dough and to roll the energy balls into it so we have them covered with coconut.
Almonds: They are part of the dough and bring with them the delicious taste of almonds. I usually process them in the food processor before adding the other ingredients, so I get smaller and more homogeneous pieces, before mixing them with the other ingredients.
Cacao powder: Packed with antioxidants, it gives the energy balls a chocolatey taste.
How to make Coconut Almond Energy Balls:
This recipe is extremely easy and all you need are 4 ingredients and a food processor. You will basically blend them all together and shape them into balls. The amount of servings you will get will depend on the size you make them. I got 15 energy balls around 4 cm or 1.5-inch size.
First, add the almonds to the food processor and process them until you get small and more uniform almond pieces. Add the other ingredients to the food processor and blend them until the ingredients get all together in a “big ball” format.
Then, shape the dough into small balls and roll them into desiccated coconut.
And they are ready to be eaten!
Store them in an airtight container in the fridge.
You can eat them as a snack or a dessert, it is a nice and tasty treat!
I hope you enjoy it!
