This appetizer couldn’t be simpler to make and it takes a maximum of 10 minutes. All you need is a cucumber, feta cheese, oregano, olive oil, and toothpicks to hold it all together.
It is healthy, vegetarian, and suitable for all family members (unless they have some kind of intolerance, such as lactose).

Cucumber Feta Cheese Rolls Recipe Ingredients:
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Cucumber: I used one big cucumber and it resulted in 16 rolls. We are going to cut the slices using a cheese slicer just like if we would do with a cheese piece. Or as if we were trying to peel the cucumber using a cheese slicer.
Feta cheese: Just plain cucumber would be a bit boring as a snack or appetizer, so we are adding feta cheese cubes inside the cucumber roll to make it tasty. Feta will add flavor and creaminess to the recipe. I used 150g of feta cheese.
Oregano: To make it even tastier, we will spice the feta cheese with oregano and olive oil. I used about half a tablespoon of oregano, but you can adjust it to your taste. Another herb that would go extremely well with cucumber is dill. I used oregano to make it a more Greek-style recipe.
Olive oil: The feta cheese cubes will be spiced with olive oil and oregano to give feta more flavor.
You will also need toothpicks to make sure the rolls will not lose their form and that the feta cubes will remain inside the cucumber rolls.
How to make Cucumber Feta Cheese Rolls
This is an extremely easy, simple, and quick recipe that can be done in a maximum of 10 minutes and requires no baking and no previous ingredients preparation.
First, we will have to slice the cucumber.
I tried two different tools to get the perfect thin, but not-too-thin slices of cucumber that would allow me to roll them around the feta cheese. You can check the trials in the photo below.
The first one I tried was a normal potato peeler and I don’t think it gives the best result because the slice gets way too thin. It might be possible to make the slices less thin using a potato peeler, but I couldn’t make it.
For the second trial, I used a cheese slicer and it worked a lot better! In fact, in my opinion, the cheese slicer gets the perfect slice thickness for this recipe.
So for this recipe, you will get as many slices as possible using a cheese slicer. I got 16 slices from 1 cucumber.
Then, we have to prepare the feta cheese, by cutting it into cubes and spicing it with olive oil and oregano. I cut the feta cheese in about 1 cm/0.4 inches. You don’t need to add any extra salt because feta cheese is already salty enough.

After that, all you have to do is pick one feta cheese cube and one cucumber slice and make the rolls. Start with the feta cheese cube in one of the tips of the cucumber slice and roll it.
Use one toothpick to make sure the cheese will not escape and to keep the roll format of the serving.
And that’s it! Just repeat the same process until the cucumber slices are over and your appetizers are ready to be served to your family and guests.

Tip: If you don’t like vegetarian appetizers or want to add some extra flavor, you can add a piece of smoked salmon or smoked prosciutto to the roll, for example.
This will give an extra layer of flavor to the roll and will taste delicious!

- 1 big cucumber
- 150 g feta cheese
- 0.5 tbsp oregano
- drizzle olive oil
With a cheese slicer, cut cucumber slices.
Cut the feta cheese in cubes of about 1 cm/0.4 inches. Place the cubes in a bowl, add oregano and drizzle of olive oil. Mix until the feta pieces are covered with olive oil and oregano.
Pick a feta cheese cube, place it in the tip of the cucumber slice and roll it. Use a toothpick to keep the roll format.
