I think by now it is pretty clear that I am a big fan of almonds. In many of my recipes, I include almonds. But almonds are so versatile and there are so many things that we can do with them! Today I bring a homemade almond milk recipe, which is one of my favorite plant-based milks of all time!
Of course, the store-bought one is very convenient, but it is also full of other ingredients that ideally should not be there, but they are for conserving the product. I like the homemade version because it’s healthier and I also because I honestly prefer the taste.
The basic recipe contains only 2 ingredients: almonds and water. If you want to make it sweet, you can always use a natural sweetener, and one that I like very much is dates.
I like to add vanilla because I love vanilla. I think by now it is pretty obvious also!
There are 2 ways of making almond milk: the one that you can do when you have time and the one you can do when you don’t have time. If you have time, you can soak the almonds overnight or for at least 8 hours, but if you don’t, you can cheat and use boiling water – for 15-30 minutes and the almonds are ready!
Besides being delicious this is a vegan, lactose-free milk and can be used for several recipes or simply to drink it as it is. I hope you enjoy it!
Homemade Almond Milk Recipe Ingredients:
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Almonds: Of course! You need almonds to make almond milk. I used raw almonds, but you can use toasted almonds too.
Water: You will need filtered water to blend it with the almonds. I usually add 4 cups to get 1L of almond milk, but if you prefer it thicker, add less water.
Vanilla aroma/extract (optional): It will add a nice flavor to your almond milk, but if you want basic almond milk to use as an ingredient in main dishes or just because you prefer it, you can skip it.
Dates or Maple Syrup (optional): If you like sweet almond milk, I recommend you add 1-2 dates to your almond milk or 1-2 teaspoons of maple syrup, when you blend all the ingredients together. I chose to not make my almond milk sweet, so I didn’t add it this time. Also if you want basic almond milk, you can skip this ingredient.
How to Make Homemade Almond Milk
This is an extremely simple and easy recipe, you just have to blend all the ingredients together. Here is how you make it:
First, you have to soak the almonds in cold water for about 8 hours or overnight until they are plump. Although, if you don’t have time, you can soak them in boiling water for 15-30 minutes as well. This process will make it easier to blend, resulting in a creamier and nicer milk and also it won’t be too hard on your blender.
Then discard the water in which your almonds were soaked in and add in the blender all the ingredients (almonds, water, and vanilla – also the dates if you choose to make your milk sweet). Blend it all until you obtain smooth and creamy milk. The time will depend on how strong is your blender, but it should be a quick process 30 seconds to 1 minute.
Set a nut bag or a fine sieve in a bowl and pour your almond milk into it. This will separate the liquid from the solid part. Squeeze as much as you can to remove all the liquid. Do not discard the almond pieces! We can bake a nice bread with it!
You can use your vanilla milk straight away or you can store it in a clean airtight jar in the fridge for up to 4 days.
You can add it to your oats, to your granola (you can try this and this recipe), to bake, to add into your coffee, smoothie, or tea…the sky is the limit!
Homemade Almond Milk
Delicious, vegan and lactose-free milk that can be used for several recipes or simply to drink it as it is!
- 200 g or 1 cup of almonds
- 1 teaspoon vanilla (optional)
- 4 cups of water
In a bowl put the almonds and cover them with water, until there is space for them to double the size. Let them rest overnight. Or use boiling water and let them rest for 15-30 minutes. Discard the water.
Add all the ingredients in a blender and blend it well until smooth.
Pass the milk through a fine sieve or nut milk bag and squeeze it to remove all the liquid. Pour the almond milk in a clean airtight jar. It can be stored up to 4 days in the fridge.
