I think I have found my new favorite treat and I bring its recipe today: Easy and Healthy No-Bake Chocolate Almond Tartelettes! It is quite easy recipe that doesn’t require too many steps and too much stuff to do. There is no extra sugar, no flour added and no baking needed.
The crust of the tartelette is made of fresh dates, cacao, and almonds. The dates are naturally very sweet so you don’t have to add any other type of sweetener to it. Fresh dates also help with “sticking” all the crust ingredients together.
When you mix all the crust ingredients together, honestly for me it is already a delicious snack! It reminds me of a healthy version of chocolate truffles with almonds – I could eat it just like that, nothing else needed!
But since this is a tartelette recipe, it needs a topping and the topping of this one is made of dark chocolate 70%, lactose-free cream, and coconut oil. The coconut oil is there to help with the texture, because otherwise we would have a ganache, and the ganache texture, although delicious, is too loose.
I currently don’t have tartelette trays so I used a cupcake tray. If you also just have the cupcake tray, this recipe will give you around 9 tartelettes cupcake-size. If you have a proper tartelette tray, you will probably end up with a little bit less, since the tray is bigger than the cupcake one, but with bigger tartelettes also.
You can serve it as a snack or dessert – small bites of pleasure!
I strongly recommend you give it a try because the taste is SO good and it is healthier than the classic recipe!
Healthy No-Bake Chocolate Almond Tartelettes Recipe Ingredients:
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Pitted fresh dates: We will need 15 pitted fresh dates to prepare the base or crust of our tartelettes. Fresh dates are also delicious natural sweeteners and will help with getting the crust ingredients all together in a “dough”.
Almonds: We will need some for the crust and some for decoration. The combination of dark chocolate and almonds is just perfect!
Chocolate 70%: We will need a dark chocolate bar for this recipe. Choose from 70% up and a quality one. This will be one of the ingredients of our topping.
Cooking cream: We need it to prepare the topping. We will mix it with the chocolate bar and coconut oil to make the topping not so hard as a chocolate bar texture, but creamy and soft. I used a lactose-free one because I think it is easier to digest.
Coconut oil: The coconut oil will help with the topping as well. If we had just the chocolate bar and cream, the topping would be too runny. This will help it to be a bit firmer.
Cacao powder: We will use it to prepare the crust and to give it a bit more of a chocolate taste. Also, we have some extra antioxidants with this ingredient.
How to make Healthy No-Bake Chocolate Almond Tartelettes:
This is another really simple recipe that requires no baking and almost no effort.
First, we start by preparing the base or crust of our tartelettes. I started by adding the almonds to the food processor and processing them into smaller pieces and then adding the dates and cacao powder to it and blending until it all came together into a “big ball”. I chose to process the almonds first, so I could get them into a more homogeneous size. You can also add all the ingredients at once instead and process it all, it will work as well.
Then, distribute this dough into tartelette trays or into a cupcake tray, as I did, because I don’t have the tartelette ones. If you choose to use the cupcake tray, I recommend covering it with a baking sheet or cupcake wrappers to make it easier to remove from the tray once it is ready. Gently press the dough to make it flat. Put the tray in the freezer while you work on the topping.
Break the chocolate bar into pieces and put it in a pan with the cream and coconut oil and cook it under low temperature, stirring throughout the whole process. Cook it until the chocolate pieces are completely melted and all the ingredients are well mixed.
Take the crusts out of the freezer and pour the topping on them. Put it back in the freezer for about 1 hour or in the fridge for about 2 hours, until the topping is solid.
Once the topping is solid, you can chop some almonds and add it on the top for decoration, like I did, or decorate as you prefer.
And that’s it the tartelettes are ready to be eaten!

No-bake Chocolate Almond Tartelettes – Easy, healthy and incredibly delicious!
- 15 pitted fresh dates
- 1 tbsp cacao powder
- 1 cup almonds
- 100 g 70% dark chocolate bar
- 1 tbsp coconut oil
- 200 mL cooking cream
For the crusts: add the almonds in the food processor and process until the almonds are in smaller pieces. Add the dates and cacao powder and process until it all comes together in a "ball".
Distribute the mixture into a cupcake tray or tartelette trays and gently press it to be flat. If you decide to use a cupcake tray, cover it with baking sheet or cupcake wrappers to make it easier to pick them once they are ready. Put the tray in the freezer while you prepare the topping.
For the topping: Break the chocolate bar into pieces and add it in a pan with cream and coconut oil. Under low temperature, keep stirring throughout the whole process and cook it until the chocolate is completely melted and all the ingredients are well mixed.
Take the crusts from the fridge and distribute equally the chocolate topping into the crusts and put it bake into the freezer for 1h or put it in the fridge for 2h.
