Apple Cake with Marzipan – Deliciously Simple!

It is autumn and time for apple recipes! Also, we had a lot of apples at home, freshly picked from my sambo’s mom’s garden and we needed to use them. And what better way to use apples than baking something delicious, right?

After baking my apple pie with marzipan, I was really into trying recipes with apples and marzipan. After all, that is a great combination, isn’t it? So, I decided to try to bake an apple cake with marzipan and see if it would taste as incredible as the pie did.

And my friends, the result was incredible! Fluffy, soft, moist, light batter and with a smell and taste that just make you drool! And the best part is that besides being delicious it is very simple!

Apple Cake with Marzipan Recipe Ingredients:

Here are some tips and “whys” of the recipe.

Apples: The main ingredient, of course! I used small red apples, but you can use any other type of apple, just make sure that are good for baking.

Eggs: I used 3 big eggs. The eggs will help with the fluffiness.

Butter: Room-temperature butter makes it easier to work with. Unsalted butter is also better to use for this recipe.

Marzipan: It usually comes in one block, so cutting it into pieces before mixing it with the other ingredients helps the process.

Flour: For this recipe, you will need all-purpose flour, but not too much, because the marzipan will help with the “batter building”.

Cinnamon: Apples and cinnamon are a combination made in heaven! Although, if you do not like cinnamon you can change it to cardamon, which also goes perfectly well with apples.

Almond shavings: They help with decoration and add crunchiness to the cake.

Vanilla aroma/extract:  It enhances the cinnamon’s warming flavor.

How to make Apple Cake with Marzipan:

Fear not! It is a very easy and simple, one bowl-recipe to make. The exact measurements are described in the recipe form below.

First, preheat the oven to 200°C/390°F chop the apples in 2-3 cm chunks, and remove the seeds. If you prefer, you can peel it also, but I prefer to keep it.

Next, add in a bowl sugar and marzipan. As I mentioned before, it is easier to work with the marzipan if you break it into pieces before whisking it with sugar. If you do not break it into pieces, you risk having a lot of marzipan and sugar everywhere, especially if you are using a mixer.

Then add the butter and keep whisking until you obtain a cream texture in this step. Once you get the texture right, you can add the eggs and vanilla aroma/extract and keep on whisking until all ingredients are well mixed.

After that, you just have to pour the batter into a cake tray covered with a baking sheet and add the apples in a nice pattern, spreading them equally around the batter. Spread the almond shavings on the top of the batter.

Put it in the center of the oven, and bake it for 40-45 minutes or until a toothpick or fork comes out dry. But watch it carefully, because the temperature can change from oven to oven and you do not want your cake to burn!


Apple Cake with Marzipan

Fluffy, soft, moist, light batter and with a smell and taste that just make you drool!

  • 150 g marzipan
  • 150 g sugar
  • 150 g butter
  • 3 eggs
  • 60 g flour
  • 160 g apples, (chopped, with no seeds)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract/aroma
  • 1 handful of almond shavings, (for decoration)
  1. Preheat the oven at 200°C/390°F and chop the apples.
  2. In a bowl, add marzipan in pieces and sugar and whisk them together. Add butter, whisking until obtaining a cream.

  3. Add the eggs and vanilla extract/aroma to the mixture and blend well.
  4. Add flour and cinnamon to the mix and whisk together all the ingredients until well blended.
  5. Pour the mixture in a cake tray covered with baking sheet. Add the apples and almond shavings for decoration.
  6. Put the cake tray in the center of the oven and let it bake for 40-45 minutes or until a toothpick or fork comes out dried. Watch it carefully to not burn.
