Besides apples, when I think about autumnal fruits, I think about pears. I really like pears, to simply eat them as they come from nature or to add them as an ingredient to make a dish taste even more delicious. Pears go well with desserts also, such as pear cake, pear pie, pouched pear in wine..the list goes on and on.
The mixture of sweet and salty, for example, goes really well when you add pear as the sweet ingredient. A really good example would be pear and blue cheese or brie…hummm! I might post a recipe involving these two elements someday.
But this time when I was looking for a recipe I was not really thinking about main courses or entrées. I wanted something sweet. Something like a cake or a pie.
When I started googling for inspiration for pear cakes, I was very surprised because I could not find too many recipes out there. Or at least not too many that I was completely happy with.
So, I found a recipe for apple cake and decided to besides making some extra changes, switch apples for pears and see what would happen. I also decided to add some almond flour and less wheat flour to have a lighter batter (I’m not talking about calories here!).
The cake turned out to be really good: fluffy and light, with very small pieces of almonds from the almond flour, and the sweetness of the baked pears. Such a delicate and elegant flavor! Just goes perfectly well with a cup of tea or coffee for autumn afternoon fikas.
Pear Cake Recipe Ingredients:
A little bit about the ingredients I used for this recipe:
Pears: The pears I had at home were quite big, so I just needed one, but if you only have small ones, you can adjust the quantity for around 2 or 3. I chopped them into about 2 cm pieces, but did not worry too much about having them the exact same size.
Yogurt: The yogurt 10% fat (Greek yogurt, usually) will help the cake to be moist.
Cardamon and ginger: These are two spices that are just the perfect match for pear. You can add only one of them if you don’t like cardamon or ginger, it will still taste great. If you do not like any of these spices you can change for cinnamon or simply not add any spice at all. I am a big fan of spices so I would not recommend removing them – but it is totally up to you!
Almond flour: If you do not have almond flour, you can switch to wheat flour, but the lightness of the cake and the delicious crunchy little pieces of almond will be lost.
Flour: For this recipe, I used all-purpose flour. It is almost a 1:1 ratio for all-purpose flour and almond flour.
Sugar (regular sugar): You can add more or less, depending on how sweet you want your cake to be.
Butter: It is easier to work with butter and get to the cream point when it is at room temperature.
Vanilla: Vanilla will add another layer of flavor to the cake and enhance the spices’ flavor.
How to make Pear Cake:
This, as the title mentions, is a simple and delicious recipe. It is a one-bowl recipe, which makes it even better (fewer things to clean later!). The exact measurements are described in the recipe form below.
First, preheat the oven to 180°C/350°F and chop the pear, removing the seeds. The pieces can be about 2-3 cm, no need to be very precise with it, but try to not have extremely different sizes. You can also peel the pears if you prefer, but I kept the peel.
Next, in a bowl, you are going to add sugar and butter and whisk them until you have a cream. Make sure you choose a bowl that is not too small because you are going to add all the ingredients to it.
Then, add all the other ingredients, except the yogurt. Once you have everything nicely blended, add the yogurt and whisk it all until well blended and uniform.
After that, you will pour the batter into a cake tray covered with a baking sheet and add the pear pieces in a nice pattern well-distributed way.
Put it in the center of the oven and bake it for 30-35 minutes or until a toothpick or fork comes out dry. But watch it carefully, because the temperature can change from oven to oven, and you do not want your cake to burn!
Simple and Delicious Pear Cake

- 120 g butter, (room temperature)
- 150 g sugar
- 150 g butter
- 3 eggs
- 100 g flour
- 80 g almond flour
- 100 g yogurt 10% fat
- 1 big pear, (chopped, with no seeds)
- 1 teaspoon ginger
- 1 teaspoon cardamom
- 0,5 teaspoon bicarbonate
- 1 teaspoon vanilla extract/aroma
- 1 teaspoon baking powder
Preheat the oven to 180°C/350°F and chop the pear, removing the seeds.
- In a bowl, add butter and sugar and whisk them together until obtaining a cream.
- Add the eggs and vanilla extract/aroma, ginger, cardamom, baking powder, bicarbonate and almond flour to the mixture and blend well, until homogeneous.
- Add yogurt and whisk together all the ingredients until well blended.
- Pour the mixture in a cake tray covered with baking sheet. Add the pear pieces and decorate as desired.
- Put the cake tray in the center of the oven and let it bake for 30-35 minutes or until a toothpick or fork comes out dried. Watch it carefully so it does not burn.
