Sometimes all you want is to not have to worry about preparing breakfast in the morning when you are in a rush because you snoozed the alarm way too many times.
Or maybe you just don’t want to worry about it in the morning because you already woke up hungry and all you need is food, right?
Every now and then I like to prepare some kind of overnight breakfast, such as overnight oats or overnight chia puddings, because they are simple, fast to prepare, nutritious and delicious!
There are many variations of chia pudding that you can make so you never get bored.
A little bit about Chia Seeds
Did you know that chia seeds were used in the ancient Mayan and Aztec diets over a thousand years ago? The seeds were used in their diets to boost stamina and increase energy.
The word “chia” actually means “strength” in Mayan language. Chia seeds are incredibly rich in nutritional value – full of antioxidants, fiber and omega-3 fatty acids and minerals.
Chia seeds have a nutty flavor, it is super versatile and has an interesting characteristic of absorbing water and forming a gel – which is exactly what we are looking for in this recipe!

Berry Sauce Overnight Vanilla Chia Pudding Recipe Ingredients
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Chia seeds: The main ingredient of this recipe. They are responsible for the gel formation.
Oat milk: I used oat milk to hydrate the chia seeds. You can use different types of plant-based milk such as coconut milk for extra creaminess or almond milk, for a different taste, for example.
Berries: I used frozen berries for this recipe.
Agave syrup: For sweetness. I chose agave syrup, but you can change to the sweetener of your preference. Honey or maple syrup also goes really well here.
Vanilla: To give it another layer of flavor.
Granola: I used homemade granola as a topping. I wanted to add a bit of crunchiness.
The granola in the picture is not exactly the same, but there is another recipe for homemade granola in the blog that would be perfect with this chia pudding!
How to make Berry Sauce Overnight Vanilla Chia Pudding:
In the recipe I added the total time of preparation as 8h15min because the idea is to be an overnight meal, so you can eat it the next morning.
Chia seeds form gel when in contact with water in about 30 minutes so, don’t worry, it won’t take you 8 hours of your day to prepare it!
First, in the night before, mix the chis seeds, with the milk, vanilla, and sweetener of your choice. Stir the ingredients for about a minute to avoid lump formation.
Put it in the fridge and leave it there overnight.
Then, prepare the sauce. Put the frozen berries in a pan and thaw on the stove while gently smashing the fruits.
Let it cool down and save it in the fridge.
In the next morning, “build” your dish. You can do as I did and add the berry sauce in layers, to give it a parfait look. Or you can simply put the sauce on top of the chia pudding and mix.
I added granola as a topping to give it a bit of crunchiness. But you can play around with the toppings, and add some nut pieces, for example, instead of the granola.
This recipe is perfect for summer or hot days, but honestly, I eat it also during colder months because it tastes so good!

Berry Sauce Overnight Vanilla Chia Pudding
Berry coulis distributed among chia pudding layers, to give it a parfait look with homemade granola as a topping to add some crunchiness. Healthy and delicious!
- Chia Pudding base:
- ¼ cup chia seeds
- ¾ cup oat milk
- 1 teaspoon vanilla aroma/extract
- 1-2 teaspoon honey/agave syrup/maple syrup
- Berries Sauce:
- ½ cup frozen berries
- Optional Toppings:
- 1-2 tablespoon homemade granola
For the Chia pudding base preparation:
On the previous night you intend to eat the chia pudding, add chia and oat milk, vanilla extract and and the sweetener of your choice in a bowl. Stir well for around a minute to avoid any lump formation.
- Put it in the fridge overnight.
For the topping preparation:
Put the frozen berries in a pan and thaw on the stove while gently smashing the fruits. Let it cool down and save it in the fridge.
Combine:
- On the next day, in a bowl, add the chia pudding and the berries sauce and toppings of your preference.
