I think this is the tastiest beetroot salad I have ever eaten! I tried it at Christmas and just had to make it! This is the delicious Beetroot and Apple Salad with Mustard – the recipe I bring today.
I was never a fan of cooked beetroots, I prefer them roasted or raw in juices or salads. But in this recipe, the beetroot is cooked and is absolutely delicious – my favorite so far!
The apple is there like a surprise element – when you expect to have just beetroot, you just taste a different texture and a bit of a tart flavor, it adds a pinch of freshness to the recipe!
And something that might sound a bit weird is mixing beetroots and apples with mustard. But trust me this is an incredibly good mixture! We need a bit of mayonnaise and crème fraîche also to avoid the mustard taste too strong and sharp and for the sauce to become perfect!
One red onion also makes this salad more interesting by adding another type of texture and crunchiness. It also adds a bit of spiciness to the recipe and together with all the other ingredients it makes the perfect beetroot salad!
And this recipe is so extremely easy and simple to prepare that it just makes it even better!

Beetroot and Apple Salad with Mustard Recipe Ingredients:
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Beetroot: The main ingredient of this salad! The beetroots will have to be boiled and peeled in advance so we can prepare this recipe. The time of cooking will depend on the size of the beetroots and on how soft you like your beetroots to be. If you want to make it faster you can buy the ones that are already cooked and peeled, like I did, it will work just fine.
Red apple: Just one big apple is enough. It gives a different texture to the recipe, a different kind of sweetness, and a bit of tartness. If you prefer it with more tartness, you can use green apple instead of red.
Red onion: One red onion is nicely chopped for texture and seasoning.
Mustard: Mustard for seasoning and you will be amazed at how tasty it will be!
Mayonnaise: It will help with the sauce of the salad and also helps the mustard to not taste super strong.
Crème fraîche: This will also help with the sauce also. I used lactose-free cream because I find it easier to digest.
Black Pepper: For seasoning.
Salt: To enhance the flavor of the dish.
How to make Beetroot and Apple Salad with Mustard:
This is one very simple and quite easy recipe with a very tasty flavor! Basically, you just have to cut all the ingredients into pieces, pour them into a bowl, and mix. It just requires a bit of preparation if you don’t buy the beetroots already cooked and peeled – then you will have to do it and wait a bit for them to cool down before preparing the dish.
First, cook and peel the beetroots. Once they are not warm anymore, cut them into pieces. Peel and chop the onion. Peel and cut the apple into pieces.
Then, add all the ingredients in a bowl and mix them well until they are all well mixed and covered with the sauce.
Yes, the recipe is that simple and is ready to be eaten!
You can eat it as a side dish or add it to a sandwich with meatballs like the Swedes do (it’s called köttbullemacka).
I added thyme for decoration, you can add some herbs as well or not, as you prefer.

Beetroot and Apple Salad with Mustard
The most delicious beetroot salad you will taste! Beetroot and Apple Salad with Mustard is perfect as a side dish or in sandwiches.
- 500 g beetroot, (peeled and cooked)
- 1 big red apple
- 1 red onion
- 100 mL mayonnaise
- 100 mL crème fraîche
- 1 tbsp mustard
- 3 tsp salt
- 1 tbsp black pepper
- Cook and peel the beetroots until they are soft. Time can vary depending on the size of the beetroot and on how soft you like your beetroots to be. Once they are not warm anymore, cut them into pieces. Peel and chop the onion. Peel and cut the apple into pieces.
Add all the ingredients in a bowl (beetroots, apple, onion, mustard, pepper, salt, crème fraîche, mayonnaise) and mix them all together until you have all the ingredients all well mixed and covered with the sauce.
