Looking for a spicy meatless main dish? Look no further! Today I bring a Mixed Beans and Kale in Tomato Garlic Sauce recipe. This is a very easy and packed with flavor recipe that you can make in under 30 minutes.
I used mixed beans but it works with only one type of bean as well such as white or butter bean. The garlic and chili flakes were my choice for the seasoning to make it a bit spicy.
And the kale was my green of choice this time to add a bit of crunchiness. Spinach would go quite well in this recipe too. With spinach, there would be no crunchiness but it would be equally nutritious.
This recipe can be served as a main dish, with some rice or bulgur, served with a piece of bread, or as a side dish – it depends on your preference!

Mixed Beans and Kale in Tomato Garlic Sauce Recipe Ingredients:
A little bit about the ingredients I used for this recipe. The exact measurements are described in the recipe form below.
Mixed beans: For this recipe, I used canned mixed beans, but you can use just one type of bean if you prefer. Also, you can prepare your beans from scratch, the same way I prepared the canned ones, boil them with laurel leaves and salt.
Kale: I used 4 small kale leaves, but if you don’t like kale, you can use spinach instead.
Tomato sauce: This is the sauce of the dish, as the name suggests. I used one that came with a bit of tomato pieces as well because I like the texture and flavor better than the smooth one.
Tomatoes: I used 2 medium tomatoes to have more tomato pieces in the sauce.
Garlic: I used 3 big garlic cloves for this recipe. This dish is supposed to have a quite noticeable garlic taste, but you can adjust it if you prefer it milder or stronger.
Vegetable stock cube: I used 1 vegetable stock cube to enhance flavor and make the sauce slightly thicker. You can use a liquid one or even better a homemade one if you have it, for a bit more taste.
Chili flakes: I added some chili flakes to make it spicy, but if you don’t like spicy food, just skip this ingredient.
Salt: A little bit to enhance the flavor.
How to make Mixed Beans and Kale in Tomato Garlic Sauce:
First, prepare the beans by boiling them with laurel leaves and salt. If you use canned beans like I did, discard the liquid from the can and wash the beans before boiling them. If you prepare from scratch, add the laurel leaves and salt when preparing the beans. Cook the beans until they are soft.
Then, peel the onion and garlic and chop them into pieces. Chop the kale into pieces as well and add it with garlic and onion in a frying pan with a drizzle of olive oil. When the onion is looking more translucent, add the tomato sauce. Chop the tomatoes into pieces and add it with the beans to the pan with the other ingredients.
Add the vegetable stock to the pan as well and stir until the stock cube is completely dissolved and well mixed in the sauce. Then add salt and the chili flakes and stir well.
And it is ready!
You can eat it with rice or bulgur, like a stew, or with bread, it also goes really well.
Mixed Beans and Kale in Tomato Garlic Sauce
No meat, spicy delicious stew: Mixed Beans and Kale in Tomato Garlic Sauce!
- 230 g or 1 can of mixed beans
- 4 kale leaves
- 500 g tomato sauce
- 3 garlic cloves
- 1 onion
- 2 tomatoes
- 1 vegetable stock cube
- 1 tbsp chili flakes
- 1/2 tbsp salt
- 2 laurel leaves
Discard the liquid from the can and wash the beans. Boil the beans with a bit of salt and the laurel leaves until the beans are soft. If you choose to prepare the beans from scratch, prepare them with laurel leaves and a bit of salt until soft.
Peel the onion and garlic and chop them. Chop the kale leaves. Add the onion, garlic and kale in a frying pan with a drizzle of olive oil. Keep stirring while cooking under medium heat.
When the onion looks a bit translucent, add the tomato sauce. Chop the tomatoes and add them with the beans to the frying pan containing the garlic, onion and kale. Add the chili flakes and salt and stir.
Add the vegetable stock cube and stir until it completely dissolves and is well mixed in the sauce.
