I have been taking this Beetroot and Kale Juice for the last 3 weeks right before my breakfast, not only because of the skin and health benefits but also because it is extremely simple and delicious. Thanks to its ingredients it also gives a boost to your immune system!
It contains beetroot, kale, ginger, redcurrant and apple. Sometimes I change it a bit and add a carrot or instead of redcurrant, I add lemon juice.
Beetroot and Kale Juice Ingredients Recipe:
This recipe is actually made with more than just beetroot and kale! I thought the name would be way too long, so I decided to add just the “main characters” in the title.
Now let me tell you about the benefits of the ingredients and why this recipe helps with your overall health:
1. Beetroot
The beetroot is sweet so there is no need for extra sweeteners in this recipe. It also gives a beautiful color!
Beetroot contains antioxidants and electrolytes that may support cardiovascular and brain health. Thanks to its high concentration of nitrates, it helps with the improvement of performance in athletes by increasing the amount of time to reach exhaustion and improving cardiorespiratory endurance (link to the article here).
Although, if you have low blood pressure, it is not recommended to consume too much beetroot for the same reason. Due to its high content of nitrates, it can lower your blood pressure levels even more and you might feel a bit lightheaded. If that is your case, you can alternate the beetroot with carrots, which are also sweet and packed with nutrients.
For this recipe, I used 1 beetroot.
2. Kale
Also packed with antioxidants that help fight oxidative damage. Some of the antioxidants you can find in kale are vitamin C, beta carotene, and flavonoids. These compounds are great for preventing chronic and degenerative diseases (link to the article here) and for skin health – vitamin C helps with the production of collagen and wound healing (link to the article here).
It is also a good source of fiber.
For this recipe, I used 2 leaves of kale.
3. Ginger
Some of the benefits of ginger are the following: support to the immune system (link to the article here), reduce inflammation (link to the article here), help digestion (link to the article here), and it is full of antioxidants (link to the article here).
It also gives a nice spicy flavor to the juice!
For this recipe, I used a 2-3 cm/around 1 inch piece of ginger.
4. Redcurrant
Full of antioxidants such as vitamin C, tocopherols, carotenoids, flavonoids, and phenolic acids. Antioxidants, as mentioned previously are great fighters against oxidative damage, which causes aging and chronic and degenerative diseases.
In the picture you can see both white and redcurrant, I froze them together, but I only used the redcurrant this time. Sometimes I use the white one also and it tastes just as good.
5. Apple
I added apple especially to improve the taste, but it also has some benefits, of course!
It is also a good source of nutrients, including fiber, vitamin C, and other antioxidants.
These apples in the picture come from my sambo’s mom’s garden. We had a lot of apples for a while and I didn’t want them to go bad so I froze them.
How to make Beetroot and Kale Juice:
This is an extremely easy recipe, all you have to do is blend all the ingredients and pass the juice through a sieve. The exact measurements are described in the recipe form below.
So, here is how you make it:
First, peel the ginger and beetroot and remove the stem from the kale leaves. Cut the beetroot, apple, and ginger into pieces. Add all the ingredients to the blender with 500 mL of water.
Blend until you obtain a smooth texture and there are no big chunks of any ingredient.
Pass the juice through a sieve and with the help of a spatula squeeze it to remove all the liquid.
If you have a juice extractor machine, you don’t need to go through the last step of passing the juice through a sieve.
And that’s it, your healthy juice is ready!
You can take this juice in your breakfast, before training, or as a snack.

Healthy and Simple Beetroot and Kale Juice
Packed with nutrients, this healthy Beetroot and Kale Juice is not only simple and quick to make, it is also delicious!
- 1 beetroot
- 2 leaves of kale
- 1 piece of ginger
- 1 apple
- 1 handful of red currant
- 500 mL water
Peel the ginger and beetroot and remove the stem from the kale leaves. Cut the beetroot, apple and ginger into pieces.
Add all the ingredients with the water in the blender and blend it well until smooth.
Pass the juice through a sieve and squeeze it to remove all the liquid.
